coca-cola cake

This is a favorite family recipe (it's what my dad usually makes for my birthday). No, it doesn't end up tasting like coke per se. It tastes a little different from your standard chocolate cake—and it's very sweet—but not in a "there is soda in this" sort of way.

  • 3/4 c. (85g) butter
  • 3 oz. (85g) unsweetened chocolate
  • 2 1/4 c. (450g) sugar
  • 3 eggs
  • 2 1/4 c. (270g) flour
  • 1 1/2 tsp. baking soda
  • 2 1/4 c. (18 oz/1.5 cans) Coca-Cola

  • 1/3 c. (38g) butter
  • 1 1/2 oz. (43g) unsweetened chocolate
  • 1 1/2 c. (300g) sugar
  • 3/4 tsp. salt
  • 3/4 c. (170g) evaporated milk
  • 1 1/2 tsp. vanilla

  1. Preheat oven to 350°F. Butter and flour a 9x13 pan.
  2. Melt butter and chocolate over low heat. Mix in sugar and eggs and stir until combined.
  3. Whisk together baking soda and flour. Add the wet and dry ingredients into the chocolate mixture and mix thoroughly. The batter will be very runny.
  4. Pour into prepared pan. Bake for 45 minutes.
  5. Poke cake all over with a fork and set on a wire rack over a baking sheet (some frosting will spill over the sides of the pan).

frosting

  1. Melt butter and chocolate over low heat. Mix in sugar and salt and stir until smooth. Add evaporated milk slowly.
  2. Bring mixture to a boil. Cook for two minutes at a boil, stirring constantly.
  3. Take mixture off heat and add vanilla. Pour frosting over top of cake while cake is still warm.
